One medium banana
1 1/2 cups uncooked oats
3/4 cups Whole Wheat flour
1/2 tsp cinnamon
1/4 tsp baking soda
Pinch of sea salt
1/2 cup 100% pure maple syrup (the real kind! Not Aunt Jemima’s!)
1/4 cup safflower or canola oil
1/2 tsp vanilla
1/2 cup raisins
Preheat the oven to 375 degrees.
In a medium bowl, mash up the banana until it is the consistency of baby food (no chunks). Add the rest of the ingredients and blend, blend, blend!
Try batter. (Yup. The benefits of egg-free cooking.) Now one more bite.
Ok, place rounded spoonfuls of dough onto a cookie sheet and bake for about 8-10 minutes, until light golden brown. Remove from oven and let the cookies finish baking on the cookie sheet for about 5 more minutes.
Yield: about 20 tablespoon sized cookies.
